A survey by the National Turkey Federation tracks demand for turkey products, most recently finding that 8% more cooked white meat turkey was shipped in the current year compared with the previous year.
Abstract:
Of the 467 million pounds of cooked turkey products distributed last year, 43% went to the food service clients. Whole birds constituted the largest type of turkey item produced in 2009, representing more than 1 billion pounds. Cooked white meat followed in second place, while ground turkey took third place at 415 million pounds.
The food service sector received about 18% of total turkey volume, consisting of cooked white meat, sliced deli meat, and raw turkey meat.
