This in-depth study of adult consumers concerning "ethically produced" foods finds that "ethical" is a broad term for consumers and includes environmental protection, high quality and safety standards, and animal welfare. More than a third of respondents said that "cage-free" and "free-range" are important to them, while 21% and 14% said "vegetarian" and "vegan" are important to them, respectively.

According to a review of 17 U.S. airports by the Physicians Committee for Responsible Medicine, most of these airports are exhibiting a steady increase in healthful food options with the exception of Dallas/Fort Worth and Chicago O'Hare, which lost points compared with the past survey.

Poor nutrition is a leading contributor to childhood obesity, which prompted the Physicians Committee for Responsible Medicine to analyze elementary school lunches served by 20 school districts. The group surveyed healthy food options and found that more schools are now serving healthy items, including vegetarian dishes, on a daily basis.

According to results from the School Nutrition Association’s comprehensive "School Nutrition Operations Report: The State of School Nutrition 2009," healthy options are becoming increasingly common in lunch programs around the country. Specifically, availability of vegetarian menu items increased by 12.4% since 2007.
